Grandma Hangover helper Chicken Soup

 Yield Approx. 8 portions

1 whole chicken approx. 2/12 -3 lb

cut into 8-10 pieces

1-1/2 jalapeno very small dice

48 oz. chicken stock

3 garlic gloves minced

1/2 teaspoon cummin

1 cup corn canned or frozen

2 tablespoon cilantro chiffonade

3 oz. olive oil

1/2 cup chooped carrots

1/2cup diced potatoes

1/3 cup celery

1/3 onion diced

1/3 cup tomatoes fresh or canned whole chopped.

Method:

In soup pot , heat the oil, over med. heat. Add the chicken pieces, brown until golden on each side. Add the garlic and mix, cook 1 minute, add the chicken stock, cook for aprox. 15 minutes until boil

Add the carrots, onion, celery, corn, potatoes, cummin, jalapeno, bring to boil until chicken is fully cook, add cummin, salt & pepper to taste & tomatoes.

You can substitute chicken stock with water & add 2-3 chicken boillon along with vegetables, or 1 1/2 tablespoon powder, be carfull with the salt.

Serve and add in the cilantro chiffonade by portions in the bowl. Enjoy the day!
