Seafood Stuffed Avocado

 

Ingredients:

1/4 lb. scallops

1/4 lb. chopped shrimp

1/4 lb. cooked crab meat

1/2 teaspoon paprika

1/3 minced garlic

pinch cummin

1/2 cup chopped fesh cilantro

3 oz. fresh lime juice

1 oz. olive oil

1 cup plum tomatoes seeded and diced

2 jalapeño peppers seeded and chopped

1/2 cup red or white onion finely chopped

salt, white pepper, pinch cummin to taste

Method:

Bring water to boil add shrimp cook until light pink.

Drain and rince with cold water peal and devine. Chill.

Boil scallops in separated water approx.3-5 minutes until opaque.

Drain and rince with cold water. Chill.

In a bowl,combine tomatoes, onion, peppers and cilantro. Chop shrimps and scallops approx. 1/4 inch, toss crab meat , combine with fork, season with paprika and minced garlic.

Add lime juice, olive oil, salt & white pepper, pinch of cummin if desire. Mix well. Cover and refrigerate.

Cut avocado in 1/2. Scoop some avocado from the center to make the center deeper for stuffing, stuff each avocado hole. Serve immediatelly. It can be arranged in the plate with lettuce leaves and lemon wedges, and served with tortilla chips or favorite.
